With over 65 years of service at the Durham Fair and countless Baking Dept. ribbons earned, Rosemarie Naples is a treasured volunteer and an expert baker. Rosemarie won "Best in Show" at the 75th Fair for her wheat bread, has published her apple pie recipe in The Ladies Home Journal, and has led years of baking tip tutorials at the Durham Fair Discovery Center. As a special "thank you" to Rosemarie for her years of support and enthusiasm, the Durham Fair has decided to dedicate the Baking Dept. Court of Honor to Rosemarie's banana muffin recipe. Rosemarie is also serving this year as a Baking Dept. judge - so take a peek at her recipe below and try for your very own "Best in Show".


Banana Muffins

Ingredients

3   mashed bananas
cups sugar
1 cups melted butter
2   eggs, beaten
½ cups sour milk*
1 tsp. baking soda
2 cups flour
1 cups raisins
½ cups nuts

Directions

  1. Beat all but raisins and nuts until well mixed.
  2. Fold in raisins and nuts.
  3. Pour into well-greased large cupcake tins.
  4. Bake at 350° for 25 – 30 minutes.
  5. Cool in pan 5 minutes.
  6. Remove to rack to cool.

*SOUR MILK: To make 1 cup sour milk for baking, use 1 Tbsp vinegar or lemon juice and enough milk to equal 1 cup. Stir and let stand for 5 minutes before using.
