Sue Collins’ Cranberry Bread
2024 Baking Court of Honor Recipe.
This year the Baking Committee is honoring, Sue Collins. Sue was an active volunteer for the Durham Fair where she was an honorary member. She was a registered nurse who also enjoyed reading, crafts and time with her friends and family. Known for her fun but straightforward personality, you could depend on Sue to offer her candid opinion on anything from cooking to politics. Sue’s family shared her favorite quick bread recipe with us, Cranberry Bread, that Sue made for many family gatherings.
Cranberry Bread
Makes one loaf.
Ingredients
2 | cups | flour |
1 | cup | sugar |
1½ | tsp | baking powder |
½ | tsp | baking soda |
1 | tsp | salt |
2 | Tbsp | shortening |
1 | beaten egg | |
1 | cup | chopped nuts |
1 | cup | sliced fresh cranberries* |
1 | orange |
Directions
- Grate rind and juice of one orange, add to boiling water to make ¾ cup of liquid.
- Cream shortening and sugar, add egg. Mix well. Sift dry ingredients together and add alternatively with juice. Add nuts and cranberries. Pour into greased loaf pan.
- Bake 350° for 1 hour.
*If you are unable to find fresh cranberries, you may boil dried cranberries for about 5 minutes, turn off heat, cover the pot, and let them steep for 10-15 minutes.
