Peg Atwell’s Wacky Cake

2015 Baking Court of Honor Recipe.

For 2015 the Baking Dept is honored Peg Atwell in our Court of Honor. Peg’s baking skills and recipes are well known to both the Durham Fair and the local community. Try Peg’s recipe for “WACKY CAKE.”

Wacky Cake

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 7 Tbsp. cocoa
  • 2 tsp. baking soda
  • 1 Tbsp. vanilla
  • 2 Tbsp. cider vinegar
  • 8 Tbsp. oil
  • 2 cups cold water

Directions

  1. Preheat oven to 350°
  2. Sift together:
    • flour
    • sugar
    • cocoa
    • baking soda
  3. Make 3 wells in dry ingredients
    • In one put vanilla
    • In one put cider vinegar
    • In one put oil
  4. Pour cold water over top. Stir well.
  5. Pour into 9″ x 13″ pan.
  6. Bake at 350° for 30 minutes
  7. Cool

Cream Cheese Frosting

Ingredients

  • 8 oz. package of cream cheese, softened
  • 1 stick margarine
  • 1 tsp. vanilla
  • 1 – 2 cup powdered (confectons) sugar

Directions

  1. Beat cream cheese, margarine, and vanilla until smooth.
  2. Add sugar slowly and beat until smooth.
  3. Frost cake and cut into squares
